IMPORTANCE OF IRON TO THE BODY Iron plays an important role in the body functions. This includes proper immune function, temperature regulation, energy metabolism and work performance. It is also the carrier of oxygen in the blood and transports carbon dioxide wastes to the lungs for removal from the body. Iron, a mineral salt, occurs in different forms in foods and therefore differs in its ability to be absorbed and used by the body. Its most readily absorbable form, known as hem iron, is found in animal protein sources such as, meat, fish, poultry and eggs, while non hem iron sources are grains and vegetables. Although the later is often supplied in greater quantities, only about five per cents (5%) of its iron is absorbed. Foods that are rich in vitamin C assists in the absorption of iron in food sources while calcium-rich-foods and supplements interfere with its absorption. Polyphenols found in coffee and teas are also known to interfere with iron absorption. Although, severe cases of iron deficiency may result in hypo chromic microcrystal anemia, many people with mild deficiency experience no obvious problems other than vague symptoms of tiredness, headache, irritability, and depression.
